the safety nazis will tell you that its dangerous and you could inadvertently ride around with the sidestand down - yes that is possible
As one of the safety nazis there is no need to butcher the wiring by hacking of the plug and leave yourself vulnerable.

For a couple of quid, some thought and application you can have exactly what the manufacturer should have provided in the first place i.e. the bike will run on the stand but only in neutral, as soon as a gear is selected power to the ECU is cut.
