Hi
I had a bit of an issue with this on an ST4S and it was most apparent in Italy at wdw last year. It was in the high 30 degrees and the bike would stall in traffic enough times to make me want to throw it in the river.
A Ducati dealership owner that i was introduced to by the Uk MD suggested using the highest octane fuel i could get and running with the fast idle adjustment set to about 1400 revs .
This helped massively but did not entirely cure the issue. Its worse when the bike is hotter and on the face of it bears out the explanation i was given that its a symptom of modern highely volatile petrol evaporating in the inlets.
The trouble is i have a 998s that obviously runs on the same petrol and it is the best breathing bike i have ever had. In fact my 2 previous bikes a 748 bp and a 748R both breathed and ran perfectly.
My personal view is that its actually a function of the newer ECU thats in use now as the 3 other bikes were all of the older generation.
Whether it can be tuned out is another matter.
