I know hindsight is great, but the DP exhausts with the ECU work fine and would've probably cost you about the same once you have the PC installed........
The DP ECU's fuel fine. I know a couple that have the PC on to, but if set up correctly then there's little advantage IMO. I've done 2 maybe 3 S2R's with DP cans and de-cat and they run fine.
Whatever route you go down, don't just disconnect the lamdba. Remove it. If you fuel the bike correctly (for power) you'll knacker the sensor. This will cost you if you go back to stock setup or sell the bike.

The fuel trim is not an option in the software of the stock ECU. It only "appears" in the DP unit. If the closed lop is still in place, then the lambda will see the mixture richening and weaken it off anyways.
I've not run with the latest version of VDST but trimming a Euro 3 compliant bike didn't work maybe 6-8 months ago?? I run the Pro version, not bike specific.
Be interested to know if it does trim the stock ECU though
