Result!
At last! I have found a ducati mechanic who can fix the duke. He has agreed to drop the engine, deglaze the bores, new piston rings and oil seals, new base gaskets, check the timing and clearances, replace the valve oil seals (properly) lap the valves and put it all together again inside a week, for £300. good value methinks.

Whilst the barrels are off, lap the heads to the barrels also.

Most aftermarket pistons use Japanese pistons rings, try cross referancing similar sized Jap bike rings, they'll more than likely come up a lot cheaper than Ducati parts!
I've used Yamaha rings in Ducati's in the past, also Yam' smallend/gudgeon pins in custom Cosworth/Arrias/Wiseco Ducati pistons.
I fairly sure that Pistal's use Jap rings as well.

Don't know about Paso's but 750ss and 600ss do not use head gaskets.
Remove head and barrel as that is off you will be wanting ( or should be ) to lap in the valves also so strip them out.
Then put some fine lapping paste on the mating surface of the barrel, small squirt of WD40 as well, drop the head into place and with an even downward pressure rotate the head back and forth just like you would a valve.
